Delicious Young Leek and Potatoes from the Farm, Warm Vinaigrette with Smoked Duck and Young Sprouts

Ingredients :

  • 2 yellow flesh potatoes
  • 2 leeks
  • 1 tablespoon of olive oil
  • 250 gr. of smoked duck breast
  • 1 bunch of snow sprouts peas
  • 4 eatable flowers

Dressing:

  • 120 gr. of olive oil
  • 20 gr. of aged red wine vinegar
  • 1 teaspoon Dijon style mustard
  • 1 1/2 teaspoon of sugar
  • salt and pepper to taste

Preparation :

  • Cook washed potatoes in salted water. Do not over cook. Cool
  • Slice potatoes with skin at about 5mm
  • Cut leek in cubes of 10mm and wash
  • Cut smoked duck breast in pieces
  • Pan fry the duck in oil until browned and set-aside
  • For the dressing, mixed all the ingredients with a hand mixer
  • Add leek in same frying pan and cook until tender, add a bit of dressing, salt , pepper to taste
  • Put potatoes on the bottom of a plate and add the warm leek in the middle of the potatoes. Add the duck breast on top of the leeks and the potatoes and sprinkle with the vinaigrette (dressing). Decorate with a flower and the snow sprouts peas.
